Product Notes

Edi Simcic's Rebula, also known as Ribolla Gialla, is a spectacular example of Slovenian viticulture. This wine offers a golden hue with amber reflections and a thrilling bouquet, packed with notes of ripe fruits, honey, and spices. On the palate, it entices with layers of complex flavours, encompassing figs, almonds, and vanilla. Crafted with expertise, every sip of this full-bodied wine reveals marvellous harmony and lingering, nuanced finish. Pair this with rich, creamy dishes or roasted poultry for an exquisite gastronomical experience. Edi Simcic Rebula is a testament to the winery's commitment to quality and tradition.

Tasting Notes

The nose is matured and youthful at the same time. It offers discrete roasted notes and an aroma of yellow fruit. It has a firm, full mouth feel with a longer aftertaste. It wins us over with distinct acidity, saltiness, and a mineral note, which cleans the mouth. After three or four years and with the development of tertiary aromas, it becomes even more complete and excellent than it was in its youth.

About the Winery

Edi Simcic

Edi Simcic winery is a renowned establishment located in the heart of Goriska Brda, in western Slovenia. Nestled amidst the rolling hills that straddle the Italian border, the winery's charismatic founder, Edi Simcic, has spent decades perfecting his craft brands, garnering a particularly strong reputation for his Bordeaux-style blends.

The vineyard prides itself on the meticulous care that goes into cultivating its grapes: the yield is kept deliberately low, ensuring the highest quality for each vintage. The lush varietals encompass Chardonnay, Merlot, Cabernet Sauvignon and, a local favourite, Rebula. Despite its relatively modest size, the winery combines a respect for traditional viniculture with state-of-the-art technology – a rare fusion that sets it apart from other vineyards in the region.

The wines themselves are a testament to this fine craftsmanship. They exude complex flavour profiles, provocative aromas, and a delightful balance that emphatically echoes the careful attention and love infused into every stage of the production process,

A tour of the Edi Simcic winery is an enriching experience. Visitors can explore the historic cellars, witness firsthand the wine-making process, and of course, sample the splendid wines directly from barrel. The staff offer a personal touch, guiding guests through tastings with an energy that mirrors the passion of the winemaker himself.

In a world teeming with commercial wineries; Edi Simcic truly stands out for its commitment to the art of viniculture. The fundamental belief here is that wine is not merely a beverage, but a living, breathing entity that tells a story. In every bottle of Simcic wine, there lies a tale of respect for the land, dedication to quality, and a deep-seated passion for winemaking. Such is the charm and allure of the Edi Simcic winery. An epitome of unique wines with character the vineyard surely is a must-visit locale for every wine aficionado.
