Thiébault also possess innovative sensibilities, ushering in modern technology. He is meticulous about maintaining minimal intervention and coaxing out the natural personalities of the wines. All wines are aged in French oak barrels; with the percentage of new oak lying between 10% to a third depending on the vintage and designation.
