Domaine Paul Pillot is famed for its exceptional white wines but also produces noteworthy reds. The bouquet, certainly, does confer with the rich, earthy Burgundy landscape and teems with notes of crisp fruit, delicate minerality, and intricate complexity. Much of this is attributed to traditional Burgundian winemaking techniques, hand-harvesting the grapes and encouraging natural yeast fermentation.

Thiébault also possess innovative sensibilities, ushering in modern technology. He is meticulous about maintaining minimal intervention and coaxing out the natural personalities of the wines. All wines are aged in French oak barrels; with the percentage of new oak lying between 10% to a third depending on the vintage and designation. The choice is left to the vagaries of each harvest, making every year's yield unique and authentic.
