The Gaia Assyrtiko by Gaia Wild Ferment is a top-notch Greek wine, characterised by a rich blend of complex flavours. Cultivated from the indigenous Assyrtiko grape on the island of Santorini, it embodies the island's mineral-infused volcanic soil, evoking a unique minerality. The wine is harmoniously balanced, with a fine acidity and long aftertaste, providing hints of oak and tropical fruit from wild fermentation. The appealing light yellow colour, combined with its opulent, aromatic profile, make it a sublime companion to seafood dishes.

Tasting Notes

A highly complex, aromatic nose and funky nose, with citrus notes combining with floral hints from the acacia wood, vanilla, toasty oak and a touch of smoke.
